A hub for bakers, farmers & researchers

Cairnspring Mills in Washington state’s Skagit Valley is reinventing local flour production. In partnership with local farmers, it specializes in making European-style bread flours using “identity preserved” wheat varieties. The outcome: delicious locally made breads and greater regional biodiversity.
